Shredded Collards Salad

Ingredients

  • 1 bunch collard greens, sliced into very thin ribbons. Grab collard greens from your local farmers in the shop!
  • 1 orange or satsuma, peeled and sliced into thin rounds
  • 2 tsp water
  • 3 tsp miso (sub soy sauce or tamari)
  • 2 tsp rice vinegar or lemon juice
  • 2 tsp tahini or peanut butter
  • 1 tbsp sesame seeds

Preparation

  1. Whisk water, miso, rice vinegar, and tahini together to prepare dressing.
  2. Toss dressing with shredded collards and orange slices, top with sesame seeds.
