Ginger-Rosemary Lemon Cocktails

Prep Time: 15 minutes  |  Cook Time: 20 minutes  |  Serves: 8

Ingredients

  • 1 cup honey
  • 1 cup water
  • 1 (2 inch) piece of fresh ginger, sliced into thin coins (no need to peel)
  • 2 sprigs fresh rosemary + additional for garnish
  • 1 cup fresh lemon juice (from about 5 lemons)
  • 1 1/2 cups vodka

Preparation

  1. In a medium saucepan bring the honey and water to a boil. Reduce heat to low, add the ginger and cook, stirring occasionally, for about 10 minutes. Remove from the heat and add the rosemary. Let the syrup steep for about 20 minutes. Strain the mixture into a bowl and discard the rosemary and ginger (actually keep the ginger and eat it!) Place the mixture in the refrigerator to chill.
  2. Fill a large pitcher half full with ice and pour in the vodka, simple syrup, and lemon juice. Give it a good stir and serve.
