These garlicky green beans with breadcrumbs and shaved parmesan are the perfect side to any meal!

Garlicky Green Beans

Serves: 2-4 | Cook time: 10 minutes

Ingredients

  • 1 tablespoon olive oil
  • 1 pound green beans, washed and trimmed
  • 3 large garlic cloves, smashed and peeled
  • ½ cup water or unsalted stock
  • zest and juice from 1 large lemon
  • Kosher salt and black pepper, to taste
  • Toasted breadcrumbs, optional
  • Shaved parmesan, optional

Preparation

  1. Heat the olive oil in a large skillet set over medium-high heat. Add the green beans and toss to coat in the olive oil.
  2. Grate in the garlic cloves using a microplane, or just roughly chop and add to the skillet.
  3. Pour in the water or stock, reduce heat to medium and cover. Let green beans steam, covered, until water has mostly evaporated, about 5 minutes.
  4. Remove cover and continue cooking green beans until all the water has evaporated. This should only take a few minutes over medium heat. The beans should still have their bright green color to them.
  5. Grate in the lemon zest, and squeeze in the lemon juice over the green beans. Toss to combine.
  6. Season with salt and black pepper to taste. Garnish with toasted breadcrumbs and shaved parmesan if using, and serve immediately.
