Stuffed Winter Squash

Prep Time: 5 minutes  |  Cook Time: 50 minutes – 1 hour  |  Serves: 2

Ingredients

  • 1 winter squash, halved
  • 1 lb mild turkey sausage
  • 1 green onion, diced
  • 1 tomato, diced
  • 1 small yellow onion, sliced
  • 2 cloves garlic, finely chopped
  • Olive oil
  • Salt and pepper
  • Garlic salt
  • Thyme

Preparation

  1. Preheat oven to 425 degrees.
  2. Clean and halve the winter squash. Brush the inside of the squash with olive oil and season with garlic salt. Place the squash face down on a baking sheet and place in oven. Bake for 30 minutes or until squash is browned.
  3. While squash is baking, in a large frying pan combine garlic and onions and cook on medium low until onions are translucent. Add turkey sausage, herbs, and vegetables pan fry until sausage is cooked through. Remove from heat.
  4. When both the squash and turkey mixture are cool enough to work with, spoon turkey mixture into squash and bake upright for an additional 10-15 minutes.
