Korean Beef Bowls

Prep Time: 10 minutes  |  Cook Time: 10 minutes  |  Serves: 4

Ingredients

  • 1/4 cup maple syrup
  • 1/4 cup reduced sodium soy sauce
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon crushed red pepper flakes
  • 2 teaspoons freshly grated ginger
  • 3 scallions, minced, white and light green parts only
  • 1/2 teaspoon sesame seeds
  • 1 tablespoon olive oil
  • 1/2 of a yellow onion, finely chopped
  • 3 clove of garlic, minced
  • 1 pound ground beef
  • 1 cup cilantro, minced
  • turnip noodles, rice noodles or grain of choice for serving

Preparation

  1. In a bowl whisk together the maple syrup, soy sauce, sesame oil, crushed red pepper flakes, ginger, scallions, and sesame seeds until well combined. Taste test and adjust as needed.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring often until fragrant, about 3 minutes. Stir in the ground beef and use a wooden spoon to help break it up into pieces. Cook, stirring often until browned on all sides, 3-5 minutes. Drain off any excess fat and then add the sauce ingredients to the pan. Simmer for about 1 minute. Remove from the heat and stir in the cilantro. Serve the beef over noodles or grain of choice and enjoy.
